Brazilian Cheese Bread (Pão de Queijo)

If you’ve never experienced Brazilian cheese bread (Pão de queijo) fresh out of the oven, you are in for a treat. These cheese puffs hit every single texture craving all at once: beautifully crisp on the outside, incredibly light and chewy on the inside, and packed with a rich, comforting cheese flavor that keeps you coming back for just one more.

If you look at similar recipes online, they can often feel a bit intimidating. The process involves pouring boiling liquid over starch, which creates a sticky, wild dough that looks like a kitchen disaster in the making. It’s usually enough to make anyone want to just close the tab.

We wanted to change that. We spent time experimenting to create our own personal version, stripping away the fuss while maximizing the flavor. We've broken down the process into simple, foolproof steps so you can get perfect cheese puffs right out of your own kitchen - even if you've never baked a day in your life.

The secret to that signature, irresistible chew is tapioca starch, which also happens to make these little puffs naturally completely gluten-free. But our favorite twist is the cheese. Instead of hunting down hard-to-find specialty ingredients, we discovered that a blend of sharp Parmesan and buttery Gouda creates the ultimate flavor profile - salty, rich, and perfectly melted. It’s a brilliant everyday snack that you can whip up on a casual Sunday afternoon or prep in advance for a busy week.

Why You’ll Love This Recipe

  • No Fancy Equipment Needed: You don’t need a stand mixer or any complicated gadgets for this. Just a basic saucepan, a mixing bowl, and your hands.
  • The Ultimate Freezer Snack: This is our favorite hack. You can roll the dough into balls, pop them on a tray in the freezer, and once they're solid, toss them into a freezer bag. When a craving hits, just bake them straight from the freezer for an extra 5 minutes. Hot, fresh cheese bread whenever you want!
  • Naturally Gluten-Free: No dense alternative flours or strange gums here. Tapioca starch naturally does all the heavy lifting, creating that iconic airy texture perfectly.

Instructions
  1. **Dry Mix:** In a large mixing bowl, whisk together the tapioca starch and salt until combined. **Prep the Oven & Tray:** Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a saucepan over medium-high heat, bring the water, oil, and milk to a rolling boil. Watch it closely so it doesn't boil over.
  3. Carefully pour the boiling liquid mixture directly over the tapioca starch. Stir immediately and vigorously until the liquid is fully absorbed and a chunky dough forms. **Note:** The dough will look uneven and gelatinous at this stage - that is completely normal.
  4. Set the mixture aside to cool for about 10 minutes. It needs to be cool enough to comfortably handle and warm enough that it won't cook the egg in the next step.
  5. - Add the egg to the cooled dough and knead thoroughly until it is completely incorporated. (The dough may separate at first, but keep kneading; it will come together). - Add the Gouda and Parmesan. Continue kneading until you have a smooth, cohesive dough and the cheese is evenly distributed. - Cover the dough and let it rest for 30 minutes. This allows the tapioca starch to absorb the moisture and helps the dough become easier to shape.
  6. Divide the dough into ~ 60 g (2 oz) portions. Roll each portion between your palms into a smooth, tight ball. Place them on your prepared baking tray, leaving a little space between each ball.
  7. Bake for approximately 25 minutes, or until the puffs are beautifully expanded and lightly golden. Serve warm.
